Fish Restaurants along the River

The riverbanks of Chongqing host many fish restaurants on boats. At the beginning, the fish-restaurant-boats were small in size and mostly used reconstructed boats. Now certain fish restaurants have been custom built; usually one boat being a restaurant with two to four floors, with interior décor differing little from other restaurants, but the top floor remaining open-air. Fish-restaurant-boats serve dishes made of fish, such as beancurd jellyfish, konjak fish, etc. with the fish always being caught on the spot from the fiver and served fresh. Of these, the beancurd jellyfish is the most famous dish, with its spicy, numbing and fresh flavor. Fine fish, soft beancurd jelly and crispy soybeans also go very well together as a dish.When night falls, fish-restaurant-boats light up the riverbanks. People sit on the boats, eating, talking, drinking and enjoying themselves.
